I am having problems with this template displaying correctly in Google Chrome and Safari (I haven't tested in firefox yet).

VirtueMart part looks totally broken. Since you highly customized this template, these problems may be caused by many reasons. I really have no idea what you did wrong. Try to restore original template if you can't find the error.

I know I have stylised the template but I dont think I have changed much on the VM side and it all works fine in IE.

I really cannot go back now as the customer is happy with the design so need to find some kind of solution

Please remember all programming changes you did in the template and try to revert them one by one. You will find the problem. I have been looking on your site for 10 mins, and really couldn't find the problem.

When you do modifications of template, your must test it often in all browsers, not only IE.

Sorry, but I am too busy working on new templates and extensions. I don't take any custom projects anymore.
