I have done this before but this doesn't seem to work here.
Have two pages where I want the top panel reature activated. And I want a left column on my stratpage but but on the other pages.
So I set my default sparky framework template, made it default and assigned that to my home (Startseite) menu item.
I then made a copy of the default and named it sparky-framework-default-menu , kept the top panel feature and removed the left column. This I assigend to my Menu menu item (Pub Burger Menu).
Finally I made another copy and named it sparky-framework-default-shop, removed the top panel feature and assigend it to all of my shop menu items.
I checked the menu items to make sure that all menus were assigned to the templates correctly.
Unfortunately this does not seem to work. Regardless of which menu item I click on only the default template shows.
This is driving me nuts!

Edit: I tried deleting all rows in my shop tempplate but that didn't change anything.

ok, different style should work. If you change something obvious like background is that change is visible?

I deleted all the rows on the "shop" template:
www.pub-burger.ch/Test/index.php/shop-bestellen/wochen-angebot
And the background on the "menu" template to yellow:
www.pub-burger.ch/Test/index.php/pub-burger-menu
As you can see the top panel feature is Bachground has not changed and the rows are still visible.
I did notice something else. If I change the default template to a different one and leave the menu item assignments the same as before. The site goes to the default template and does not consider the menu assignments.
So, this may be a joomla issue, which I can't figure out as I didn't change anything else.
