how to change "Copyright © 2012 by Your Company. Template designed and developed by Hot Joomla Templates"

That is just custom html module, go to module manager find that module and delete it or edit it's content.

This fix doesn't exist anymore. There is no Custom HTML module for this. You can only change the company name in the Template manager. How do we change the rest of this text?

Not "Template Manager" in "Module Manager" there is custom HTML module containing that text

Hi Maurizio,

Ivan's answer is not correct. To edit the rest of the text, you would need to edit file /templates/hot_wine/index.php. This text is at the bottom of that file.
