Milos, you need to forgive me for being so Joomla challenged!
In the set up of the sections/categories/articles, etc we have all the demo stuff hotjoomla has imputed for us... Do we need to delete it all or can we rename and overwrite (I have been renaming and overwriting but there is a whole bunch of stuff in there and some of the navigation is easy to get to and at other levels i am surprised when i find articles...).
I dont really want to go in like a bulldozer - so I though it better to ask.
(sorry about the noob status)

You can simply change author's name when editing any article.

OK Milo,
So let me ask you another noob question:
under the section manager - there is just one section which is called demo content. Do I delete that, add my own sections and then just link all my new articles back to my new sections from within the articles?

I suggest you to edit sections/categories and articles rather than delete them and create yours. However, it's up to you.

The joomla navigation seems to be an unusal looping system.
Just looking at it, i dont find the navigation easy to work out and I dont have any point of reference because i've never used joomla before.
So I have 2 questions:
1. Is this unique to joomla or is it unique to the template design?
2. if I delete everything and start again is the whole template going to fall apart?

1. It's unique to Joomla and it's easy and intuitive once you learn how it works.
2. You can delete everything and install HotStart again. Your site will be back to the "demo" state.
