How Do I custom change header color & logo?

I have tried changing the color of the header in my admin backend, but when I choose "custom" and specify a hex color it just defaults to red. Also I have added my logo, but "Samsara" is still on there also, how do I get rid of it. Lastly, is it possible to create and replace the header design completely? If so, how can this be done? well if figured out how to delete the "Samsara" but how do I add "padding" under the logo so that it doesn't sit right on the menu?
