Well took the plunge and instead of just installing the template I installed the hot_start package. I did as the instructions said and installed the example data as well. Install went well.

1. With my website I will only have four categories. Five at most. This template comes with categories. Can I just change the names of these categories and menus and just write up the new items or must I start from scratch?

2. I have a question about media as well what is the best size for pics that I will be uploading through the back end of the website? I noticed after uploading a pic that the pic did not do well it was too large for the page. I was thinking that the pics for even a large one should not be over say 300px wide and about the same in height, but some are wider. What is the largest the pics can be? I did re-size some pics but did not upload these. They are height wise no taller than 250px. The originals are 3,000+ and some are 11mb most are around the 7-9mb.

Yes you can just rename items, also change aliases because of url-s later.
No site has images with such big disk size (you say >7mb), keep your images less than 100kb or max 600kb in case that it's important to show them with height quality unless you expect site visitors all to have 1Gb/s internet connections
