OK, so here's my followup:
I tried using a different template style instead of messing with the logo function, and still no luck. There are 5 styles, so I tried each of the 4 that are not tied to my default Hot Corp template.
Then I tried making a totally different template my default, and then used the "assignments" tab in the layout manager to manually assign the vast majority of my menus to my "main" Hot Corp template, and I assigned a few to my "copied" Hot Corp template. The result is that my site is defaulting to the different (non Hot Corp) template.
I'm not sure, but it seems like the "assignments" tab has no effect in the template layout editor.

Strange, because we can reproduce you problem but with simple solution (just making duplicate of template).
Please take a look on screenshots in attachment, and make settings similar as there (depend on yours template).
We changed only one menu item - "installation".

Uninstalled and again duplicate hot Corp. After I uninstalled, I made sure that the regular template accepted settle changes, logo change to plain text....it did.
After duplication, I followed your pictures. I match exactly, but still no results. The first install overrides everything.
I'm going to try to update my joomla.... I'm on 2.5.14. Pretty sure this template should have no issues w that version, but who knows. Any other ideas are welcome. I'm at a loss.

I found a fix. Seems that the issue has to do with SEF links. When I turn off that feature, it works perfectly.
