unfortunately the mbstring seems to have affected all the sites we run on the vps
so i have had to remove the Mbstring again
what do you actually think the issue is as i will try again on a different test site at a later stage

Well k2 requires it so better ask on their form because they know the best

Yes but I think you need to do it on your local computer (install hot start) and remove k2 there, then export-import db and copy site files to hosting. After that edit configuration.php to change db , logs and tmp values.
